Seriously, how cute are these cups? Confession – I actually bought them for the blog alone. I realized I didn’t have anything fun to use for blog photos and who doesn’t need an extra dose of pizzazz in their life? But what’s more amazing are these parfaits. I have always been a fan of parfaits and I have to admit, Panera Bread makes a great strawberry yogurt one. I don’t get it often because I have a hard time paying ~$4 for it but every once in a while, I treat myself to one.

The Panera version is, of course, a breakfast treat. My version, however, can be classified as breakfast (a rich treat) or as dessert (a healthy one). I made sure to test out both versions. These are the easiest things in the world to make and I found myself having a hard time stopping at just one.

GLUTEN FREE YOGURT-CREAM FRUIT & GRANOLA PARFAIT

Yield: 4 small parfaits

INGREDIENTS
1 c whipping cream
2 T sugar
1/2 c yogurt
1 kiwi, diced
4 strawberries, diced
1/2 mango, diced
1 1/4 c granola

DIRECTIONS
In a bowl, whip whipping cream with sugar until soft peaks form. Fold in yogurt. In small glasses, layer yogurt-cream, fruit and granola using about 5 T of granola per parfait. Serve immediately. 

*Parfaits do no store well so be sure to use within a few minutes of making.

To lighten up the cream a bit, I folded some yogurt into the cream. Layers of granola and fruit complement the yogurt-cream mixture. Be sure to eat all the parfaits you make right away. We found out the hard way that these things don’t store well – soggy granola is just a wee bit gross.
