Seriously, how cute are these cups? Confession – I actually bought them for the blog alone. I realized I didn’t have anything fun to use for blog photos and who doesn’t need an extra dose of pizzazz in their life? But what’s more amazing are these parfaits. I have always been a fan of parfaits and I have to admit, Panera Bread makes a great strawberry yogurt one. I don’t get it often because I have a hard time paying ~$4 for it but every once in a while, I treat myself to one.
The Panera version is, of course, a breakfast treat. My version, however, can be classified as breakfast (a rich treat) or as dessert (a healthy one). I made sure to test out both versions. These are the easiest things in the world to make and I found myself having a hard time stopping at just one.
GLUTEN FREE YOGURT-CREAM FRUIT & GRANOLA PARFAIT
Yield: 4 small parfaits
1 c whipping cream
2 T sugar
1/2 c yogurt
1 kiwi, diced
4 strawberries, diced
1/2 mango, diced
1 1/4 c granola
In a bowl, whip whipping cream with sugar until soft peaks form. Fold in yogurt. In small glasses, layer yogurt-cream, fruit and granola using about 5 T of granola per parfait. Serve immediately.
*Parfaits do no store well so be sure to use within a few minutes of making.
To lighten up the cream a bit, I folded some yogurt into the cream. Layers of granola and fruit complement the yogurt-cream mixture. Be sure to eat all the parfaits you make right away. We found out the hard way that these things don’t store well – soggy granola is just a wee bit gross.
Happy Monday! We had a very relaxing weekend and can we talk about this weather!? Is it spring yet? I’m guessing we will get blasted with a bit more snow before things improve but for now, we are enjoying every minute. Today I’m pairing beige, gray and black together for a casual winter look. This…
O’Neill dress, on sale! || TJ Maxx hat I put this blog post together last night and realized that I already miss the beach, especially the warm water and the feel of sand under my feet. It’s been a mix of warm and freezing temperatures here so it’s hard to predict what the weather will be like…
Remember my Bean Corn & Avocado Salad? Well, since I’m pretty much obsessed with the stuff, this recipe is right up my alley – beans, chicken, cheese, sour cream, avocado – also sounds a bit like Chipotle, right? Speaking of Chipotle, has anyone else experienced drastically different portion sizes from one location to the next? Because…
I love pasta. In any form really. And I even made pasta – like the actual noodle – once. Someday I will be ambitious enough to do so once again and this time, I’ll share it on the blog. So what goes perfectly with pasta? Wine. And lots of it. Scratch that – wine really…
Ever have one of those hectic weeks? Months? YEARS? Life has been crazy lately. As you all know, we were just in Key West and since coming back Sunday, we’ve already been in New Jersey and have a business trip planned back up to Massachusetts this weekend. I love traveling but riding in a cargo van…
I’m so excited to share this coconut curry recipe with you today. My mom used to make this years ago and I remember it being one of my favorite recipes. The flavors are all so different but somehow they all combine together and make it work. My best friend made an unladylike face when…
