Watermelon Strawberry Mojito Cocktail
There’s nothing better than watermelon in the summertime. We have eaten it plain, with salt, with cheese (a personal favorite), in a salad, you name it. Crazy how versatile this fruit is. But I have to admit, this is my first time using watermelon in a drink recipe.
The mojito – complete with fresh mint leaves and rum. But also with a bit of a spin – I left out the lime (though you could definitely add a squeeze if you prefer) and used coconut rum and a bit of strawberries for a boost in flavor. Delicious.
How to make watermelon strawberry frozen mojitos…
You’ll want to use fresh chopped watermelon and strawberries for this recipe. Blend both together with a little sugar and fresh mint and then serve over ice. The easiest way to blend these is with a Ninja-type blender that will give you a very smooth “puree.”
Ingredients for watermelon strawberry mojito cocktail
Watermelon – Use fresh watermelon that is not crunchy or mushy.
Strawberries – Fresh strawberries are best, though if you prefer an icier cocktail, then frozen strawberries are fine.
Mint – Fresh mint really pairs nicely with the watermelon and strawberries for a delicious blend.
Sugar – Add more sugar if you prefer a much sweeter drink. This recipe uses only 2 tsp as we’re aiming for a fruit-sweetened cocktail.
