Waffles with Strawberries and a Tangy Vanilla-Cream Sauce

You’d think I would have sworn off all carbs after our carb-laden trip to Europe. But unfortunately, all those croissants, pastries and bread have only fueled my carb cravings. Which led to today’s recipe. We thought waffles would be a great idea yesterday and in keeping with European custom and flair, I made a lightly sweetened cream to go with them. Only lightly sweetened, of course.
During the trip, I realized that we over-sweeten everything from coffee to cakes to croissants. And so I made myself promise that as soon as we came back, I would gradually decrease any sugar amounts I used. I think it’s psychological, anyways. Once, I cut back on salt and for the first few weeks, it was difficult. But then I got used to it and it tasted completely normal. I’m guessing sugar is the same way. Happy Thursday!

Waffles with strawberries and vanilla cream
Ingredients
- Plain store-bought waffles or homemade waffles
- 3/4 c sour cream
- 2 T sugar
- 1 tsp vanilla
- Sliced Strawberries
Instructions
- Assemble strawberries over top waffles (homemade waffles recipe).
- Mix together sour cream, sugar and vanilla and top each waffle with a dollop of the cream mixture.
