It was fun reading through your comments on the mutabal recipe. Understandably so, not many of you had heard of it; unlike
fattoush, mutabal is not one of the better known Levantine foods. After dipping endless amounts of veggies and bread into the dip, I decided to put together a healthy and light dinner for us one night (I made A LOT of the dip). These pita sandwiches are simple to put together and they make great dinners and even better lunches. And for those who are unsure about the strong flavor of eggplant, the abundance of veggies and presence of bread helps tone that down a bit. Conversely, if you love eggplant as much as I do, be sure to slather the mutabal on!
