Isn’t it strange how you can eat a huge dinner the night before and still wake up starving, almost as if you hadn’t eaten much the day before? Of course, if you’re like me, you wake up hungry pretty much every morning, regardless if you ate a little or a lot.
And since food is on my mind this morning, this buffalo dip is the highlight of my day. It’s totally vegetarian and SO GOOD. I think the last 3×3 post on cauliflower recipeskind of got me into a cauliflower kick. And so here we are again mixing cauliflower, hot sauce, blue cheese and my favorite, corn.
This is a great dip if you’re looking for something light. The sour cream is not quite as heavy as the typical cream cheese you see in buffalo dip. And obvs, the cauliflower is healthier.
VEGETARIAN BUFFALO CAULIFLOWER DIP
INGREDIENTS
1 lb frozen cauliflower, steamed for 5 minutes
1 c frozen corn, thawed
2/3 c sour cream
2/3 c + 2 T blue cheese
2-3 T Franks hot sauce
1 tsp salt
DIRECTIONS
After cauliflower finishes steaming, drain water and use a potato masher to mash cauliflower well (using the same pot). Add corn and sour cream and mix well. Add in blue cheese and hot sauce and salt, blending everything together.
