[Vegan] Harvest Grains w. Roasted Vegetables

Harvest Grains with Roasted Vegetables, Lemon and Basil - SO GOOD!

I recently discovered this amazing Harvest Grain blend via Trader Joes. But I can’t take the credit for this important discovery. Basically, my grandmother pulls a bag out of her closet, mentions to me how great it is and voila, I find myself scouring the grain area of Trader Joes in hopes of finding it. I grab a bag, or two, head home, cook it that day and now I’m hooked. I think we can safely and accurately call it an addiction because once you eat one spoonful, you can’t stop. For those like me who love texture in their food, you will be happy to hear that the baby garbanzos in this mixture give the entire dish crunch. And for this particular recipe, I added pistachios for even more texture. The roasted veggies are pure bliss on their own but combined with the grain blend, they are to die for. And let me embarrass myself by admitting to eating this cold. I know, I’m kind of cringing myself. But it’s so good, it’s totally worth it.

Harvest Grains with Roasted Vegetables, Lemon and Basil - SO GOOD!

HARVEST GRAINS BLEND WITH ROASTED VEGETABLES

INGREDIENTS
2 red carrots, diced

2 sweet potatoes, diced
1 c fingerling potatoes, diced
1 T olive oil
1 tsp salt
1 c Trader Joes Harvest Grains blend
Juice from 1/2 lemon 
Ground pistachios
Basil

*If you do not have access to Trader Joes, you can create your own grain blend with quinoa, orzo, couscous and split baby garbanzo beans. 

DIRECTIONS
Place vegetables on a baking tray with olive oil and salt. Mix well. Roast for 30 minutes at 450F, stirring halfway through baking time. 

Cook grain blend according to package directions. Once grains are cooked, place in a large bowl and add in vegetables. Mix in lemon juice. Top with basil and pistachios.
