Tropical Grilled Corn Salsa

Grilled Corn salsa with mango, coconut, cilantro and pepper - the perfect salsa for spring!

Fresh corn is one of my favorite vegetables and admittedly, one of my favorite things about spring and summer. This is a tropical corn salsa medley (that I think could be considered a salad) with a great blend of nutritious ingredients like mango, coconut and cilantro. Eat it with a spoon or with chips and don’t expect any leftovers. Better yet, you may not want to share so you can have it all to yourself.

TROPICAL GRILLED CORN SALSA

INGREDIENTS
1/4 c + 2T cilantro, chopped
1/2 c red and orange peppers, chopped
3/4 c mango, chopped
1 T sweet onion, minced
1/2 tsp salt
1/2 lime, juiced
2 T coconut milk
1 3/4 c grilled corn (2 ears, kernels sliced off of the cob) *

*Rub corn with oil. Grill on medium for 5 minutes. Flip to other side and grill for 5 more minutes (corn will have only minor charring).

Combine all above ingredients together in a large bowl. Mix well and serve with chips.
