TEA TIME TASSIES

If you love pecan pie but wish there was more crust to go with the filling, then these tea time pecan tassies will be your thing. I can’t tell you how much the hubs and I love these. Unfortunately, these are a bit difficult to make healthier, mainly because flaky crusts require butter and the inside filling is well, pecans and butter! But from experience, these are worth every ounce of calorie in them and I wouldn’t have it otherwise.
*This simple recipe came from a dear family friend. I’m not sure where they got it from but if anyone knows, be sure to let me know!
8 T butter
3oz cream cheese
1 c sifted flour
Cream ingredients together and chill. Form dough into 24 balls and shape into cups using a mini muffin tin.
filling
1 egg, beaten
3/4 c brown sugar
1T butter, softened
dash salt
1 tsp vanilla extract
1/2 c – 3/4 c chopped pecans
Mix ingredients together and fill each mini muffin crust with about 1 tsp.
Bake at 350F for 25 minutes. Cool in pan. Loosen edges with knife.
