Vegan Broccoli Kale Salad with a Sweet and Spicy Dressing

Talk about a green salad. Full of healthy ingredients like broccoli, kale and cabbage, today’s salad is for those who love antioxidant-rich foods, for those who don’t wimp out at the mere sight of a green vegetable. This salad is a twist on yet another Trader Joe’s specialty (the TJ salad included similar ingredients but had a red cabbage slaw mixture) and is not only nutritional but also light in calories and fat. I wasn’t sure how the blend of broccoli and kale would go – both are highly flavorful vegetables – but the results were a delicious burst of greens. The dressing is a very understated, olive oil-based dressing with the purpose of adding a touch of spice. The dressing allows the flavors of the ingredients to remain the focus.

And the best part? It’s vegan!

SWEET ‘N SPICY BROCCOLI KALE SALAD

INGREDIENTS
Broccoli, chopped
Kale, chopped
Cabbage, chopped
Carrots, chopped
Cranberries
Sunflower seeds

Dressing
1/4 c olive oil
4 tsp apple cider vinegar
1 tsp ground mustard  seed
1/2 tsp salt
1/4 tsp chili powder
1/8 tsp cayenne powder
2 T sugar

DIRECTIONS
Mix vegetables together in a large bowl. Top with cranberries and sunflower seeds.

In a small bowl, whisk dressing ingredients together. Serve with salad.

Notes: Amounts of each salad ingredient dependent on preferences. I used 1 c broccoli, 3 c kale, 2 c cabbage, 1 c carrots, 1/4 c cranberries, 1/4 c sunflower seeds but amounts are extremely flexible.

  1. Looks good! I love vegan food – although I’m hardly vegan. Oh, I’ve tried .. but I get so hungry and no amount of veg or fruit is satisfying. At least I try to eat vegan I suppose.
