I’m an Italian food gal at heart. Even though I don’t allow myself to enjoy it often, I love anything and everything Italian from stromboli to pasta to gelato, the latter being my favorite.
I miss Venice. I still have dreams of their stracciatella gelato. In fact, when we were in Baltimore, we went to a gelato place and tried their version.
One word. Disappointment.
Today’s calzone recipe is stuffed with mushrooms and spinach. I don’t know what it is about that combo but I love anything with mushrooms, spinach, and garlic. And in this case, it’s in calzone form, served with a generous helping of pasta sauce.
3 garlic cloves, minced 8-10 oz sliced mushrooms 6 oz fresh spinach leaves
1/2 c ricotta 2 oz crumbled feta
1 tsp salt
*Tomato/pasta sauce
DIRECTIONS
Prepare dough according to pizza dough directions. Once dough is allowed to rise, divide out into 4 equal balls/portions. Cover and rest for 15 minutes. In the meantime, sauté minced garlic with olive oil on med-high for 2 minutes. Add in mushrooms and sauté for 5 minutes. Add spinach and salt and stir until spinach wilts. Remove from heat. Add ricotta and feta to spinach-mushroom mixture and mix well. Roll out each ball of dough into a circle. Spread spinach-cheese mixture on to the center of each portion, leaving about a 1″ edge without filling (so dough can seal). Fold in half and pinch edges to seal. Place on well-oiled baking sheet at least 1″ apart. Bake at 375F for 30 minutes. *Serve with tomato sauce.
If you’re all wondering when I’m going to stop surprising you with random changes to the blog, I promise it’s soon. I’m one of those people that gets bored quickly and I have a bit of perfectionism in me so the two together make for a crazy combination. I have a few more changes in…
Bourbon. That is today’s topic-of-the-day. Bourbon whiskey, technically. I’m actually not much of an alcohol drinker – occasionally preferring sweet wines and girly drinks but I do love cooking with the stuff. Alcohol cooks off during cooking and/or baking, imparting a deep flavor. You’ve already seen my alfredo recipe, where I used white wine in making the…
So I know that this burger recipe isn’t authentically Greek but it does use tzatziki sauce and feta cheese so does that count? We’ve already established that I’m a bit obsessed with tzatziki sauce and at least half of you confessed your addiction to me on the last post and so the most logical thing to do…
Oktoberfest originated in Munich, Germany and is apparently the world’s largest fair attracting about 6 million visitors. The fair is held for about 16 days and is filled with all sorts of German foods like…you guessed it – pretzels. But pretzels aren’t just an Oktoberfest specialty; they’re served at all sorts of fests including Christmas…
This fall I made the amazing discovery of rumchata: horchata + rum. (FYI…I’ve never actually tried horchata before but I imagine I would love it and have mentally added it to my list of things to try in the near future.) But in the meantime, I’ve been enjoying small tastes of rumchata, spiking the whipped cream…
I remember when choker necklaces used to be all the rage. I sported them proudly for a while until I went through a sans-necklace phase that lasted a few years. Then statement necklaces and dainty necklaces overtook my wardrobe until now when chokers have come back in full swing. I like edgy trends so I was happy to sport…
