Soft Peanut Butter Cookies with Chunky Peanut Butter
Though I’m more of a cakes and ice cream lover, I do love a good cookie. My definition of a good cookie is different than the average Joe as I’m pretty picky when it comes to cookie preferences. Cookies that are too sweet or too crunchy (hard) are my least favorite so my ideal cookie is soft with just the right amount of sweetness, like these molasses cookies that are my go-to for fall baking or this recipe for soft peanut butter cookies.
These are pretty easy to make using just a few basic ingredients. Don’t skimp on the peanut butter quality!

Can you freeze soft peanut butter cookies?
Yes! These cookies freeze excellently. Place in a ziplock bag after they’ve cooled and freeze up to 2 weeks. You can enjoy them slightly thawed.
Can you use smooth peanut butter?
Sure – but I do love the little texture that crunchy peanut butter gives them so I would recommend sticking with crunchy peanut butter.
Is it possible to make these cookies crunchier/harder?
Yes – just increase the bake time 3-5 minutes longer. This should result in a slightly crunchier cookie.

Sugar & brown sugar – The mix of sugar and brown sugar gives the perfect texture.
Peanut butter – As mentioned above, we prefer using chunky peanut butter but if you prefer smooth peanut butter, that would be fine.
How to make soft peanut butter cookies
This is a very basic cookie recipe – cream butter and sugar together and add the remaining wet ingredients: eggs, vanilla and peanut butter. Then in a separate bowl, mix together the dry ingredients: flour, sugar, baking soda and salt. Then mix the wet and dry ingredients together and bake! This recipe makes 4 dozen small cookies.

Ingredients
- 1 1/4 c sugar
- 1/4 c brown sugar
- 9 T butter
- 2 eggs
- 1 c chunky peanut butter
- 1 tsp vanilla extract
- 2 1/4 c all purpose flour
- 1 tsp baking soda
- 1 tsp salt
Instructions
- Cream together sugars and butter until thoroughly combined.
- Add eggs, peanut butter and vanilla and mix well.
- In a seperate bowl combine flour, baking soda and salt.
- Add wet ingredients to dry ingredients and mix until combined.
- Preheat oven to 375 F.
- Form cookie dough into tablespoon sized balls and bake on greased baking sheet for 11-14 mins. Cookies are done whenever they are golden on top and on bottom.
