Skillet Cheesy Pineapple Bacon Chicken

A and I had a wonderful dinner out on the patio last night. It was one of my favorite summer dinners: cheese plate with salami, bread, colorful peppers, tomatoes, corn and berries. I thought I’d died and gone to heaven. I realize that the calories in cheese and bread kind of outweigh the healthfulness of the veggies but it is truly a light meal. And I couldn’t say no to Wegmans wonderful cheeses. I just discovered that one of their locations is super close to me – I called A and rattled on about how great this was. His excitement only showed when he tried the creamy aged goat cheese, Ski Queen Gjetost Cheese (which by the way, is OUT. OF. THIS. WORLD.), and Armenian string cheese. I’m adding sampling all of Wegmans cheeses to my summer bucket list – thank heavens they allow you to buy small chunks.
Even though I’m not a bacon-in-a-cupcake type of gal, I do love mixing pineapple in recipes that are otherwise non-sweet. For example: I love ham and pineapple pizza and sweet and sour chicken. Super delicious with a hint of sweetness. This recipe mixes pineapple in with bacon, chicken and onions. Made of simple ingredients, this is an easy dinner to throw together last minute, assuming you’ve got all the ingredients on hand.
I hear bacon and cheese and I’m sold! Love being able to eat outside finally….your meal sounds like the perfect summer patio spread!
