Roasted Red Pepper w. Mascarpone Pasta

Well, NY was amazing. We had such a great time and it was fun seeing my mom stop every few minutes for a photo op. Her favorite part of NY was sitting down at cafes and restaurants while taking in the views. We’re already planning the next trip up.

We love pasta in our house. We eat it a few times a month and I’m always thinking of new ingredients to throw into it. Mascarpone is a great way to create a creamy pasta with little effort. Since it’s summer and herbs are in full force, basil was an obvious addition (plus it’s growing almost as quickly as the mint). And since roasted red peppers are one of my favorite pizza toppings, I knew it would be just as great in the pasta. The result: fresh pasta that’s full of flavor.

ROASTED RED PEPPER W. MASCARPONE PASTA
INGREDIENTS
16 oz pasta 
1/2 c roasted red peppers 
2 tsp garlic sautéed with 1 tsp oil
8 oz mascarpone
1 tsp salt 
1/4 c basil, chopped
DIRECTIONS
Cook pasta according to package directions until al dente. Drain. Add in roasted red peppers, sautéed garlic, mascarpone, salt and basil. Carefully mix together.

  2. I’m glad you had a good NY trip! I went last summer, and would love to go and see NYC in the fall. That’s so cute your mom took so many pictures. That would totally be me haha.

    This pasta sounds so flavorful, and I think I’m going to try and make it sometime soon! Since I don’t eat meat, pasta is a frequent meal for me because it fills me up, so I love finding new recipes. Thanks Grace!
