Pomelo Salad with Dates, Walnuts and Chocolate

This pomelo salad (with dates, walnuts and chocolate!!) is the perfect dish to make – it can act as a sweet salad or as a light dessert. I’ve never tried pomelos until now. Pomelos are similar to grapefruit but are 100x better IMO. They are less tart and pack a lot of flavor in their crisp flesh. They are delicious when enjoyed alone or if you are a salad junky like I am, you’ll want to add them to this chocolate-date salad. Be sure to peel the pomelos completely from the white rind and skin – it is extremely bitter. I learned this the hard way – aka Attempt #1. Attempt #1 was what I thought a great way to enjoy pomelos. I had visions of beautiful roasted pomelo quarters with charred tops all drizzled with chocolate. I toasted them perfectly in the oven and was so excited to see them almost caramelize. I eagerly took a bite out of one small segment and promptly spit it back out. What should have been obvious clearly escaped me until that moment – just like grapefruit, you can’t eat the white flesh. Food blogging fail. Oh well, you win some, you lose some.
