Pistachio Basil Meatballs in Tomato Herb SauceI love spaghetti and meatballs but for some reason totally unknown to me, I rarely make it. I think it’s one of those meals that I mindlessly pass over, forgetting how delicious and easy it is to make. This particular recipe uses one of my absolute favorite nuts, pistachios, and my favorite herb. I created a tomato-herb sauce to go with it but you can easily sub in your favorite sauce, homemade or not. This is one of those meals where leftovers are welcomed – we were surprised that it tasted just as good the second day as the first!

PISTACHIO BASIL MEATBALLS in TOMATO-HERB SAUCE
INGREDIENTS
Beef
1 lb beef
3 T pistachios, ground
1/2 c oats
8 basil leaves, chopped
1 tsp salt
1/2 tsp garlic pepper

Sauce
1 T oil
1 T butter
1/4 c green onions
1 T garlic, minced
24 oz tomato puree
1 tsp salt
1 tsp herbs de provence
Mozzarella balls (ciliegine), garnish

DIRECTIONS
Mix together beef, pistachios, oats, basil, salt and pepper together in a large bowl. Form into small rounds and place on a baking sheet. Broil on HI until meatballs have cooked to desired doneness in the middle, about 10 minutes or so.

In the meantime, in a large saucepan, melt butter with oil. Add onions and garlic and sauté for 5 minutes. Add in tomato puree, salt and herbs de provence. Simmer on low for about 15 minutes. Add in meatballs and simmer for another 10 minutes. 

Serve with noodles and mozzarella balls.
