
Let’s talk snacks. I don’t do much of it, mainly because I have no self-control and could never stop at one helping or two. I tend to do thoughtless snacking. The kind where you aimlessly toss handfuls of food into your mouth while glancing off in the distance, lost in thought. And so I rarely buy or make the stuff. (In case you’re wondering… A doesn’t snack. Ever. So even if I bought the stuff, I’m pretty much stuck with it.)
So how did I end up making this ridiculous snack? Thanksgiving. Best excuse ever. I have been dying to make something like this and knew my family would love it. They are all peanut butter fans and sweet and salty combos are their thing.
This mix is one of the best mixes I have ever tried, next to puppy chow, of course.
And the ingredients are so good for you: pumpkin seeds, walnuts…walnuts, pumpkin seeds.
Kidding.
It’s totally bad for you, in the low-fat-low-calorie-diet-food sense. But if you want something special to bring to a party or you just feel like splurging, this is it!
WHITE CHOCOLATE PEANUT BUTTER POPCORN-NUT MIX
INGREDIENTS
9 oz gf white chocolate
1/4 c peanut butter (smooth or crunchy)
1 c chocolate rice krispies cereal*
4 c popcorn
1/4 c roasted pumpkin seeds
1/4 c sunflower seeds
1/4 c walnuts, toasted
Salt
DIRECTIONS
Melt chocolate with peanut butter in a saucepan on low heat. Stir together. Add in cereal, popcorn, seeds, and walnuts and stir gently to combine. Lay mixture out on a pan lined with wax paper. Spread out and sprinkle a dash of salt over top. Refrigerate for a few hours or until hard. Break up mix into chunks. Store in a cool place.
*I used Coco Chomp
