Here’s a bit of shocking news for you: I have never made energy bites before. Crazy, right? I think it’s the whole I-don’t-keep-snacks-at-the-house bit I previously mentioned. But I love energy bites – maybe more than granola bars, definitely more than pop tarts or chewy breakfast bars.I roasted a pumpkin recently and made a pumpkin pie but as you all know, large pumpkins = A LOT of pumpkin flesh. And so I came up with these energy bites as a way to use up some of said pumpkin. With healthy ingredients like coconut, pumpkin seeds and oats, these energy bites go a long way in satisfying a sweet tooth without the inevitable guilt from eating a fat-laden treat.

NO BAKE COCONUT PUMPKIN OAT ENERGY BITES
Yield: ~15 energy bites
 
INGREDIENTS
1 c cooked & pureed pumpkin
1/4 c shredded coconut
1 c oats
1 oz dark chocolate 
2 T honey (substitute sugar for vegans)
3 T roasted and salted pumpkin seeds
3 T roasted and salted sunflower seeds
1 T coconut oil
1/2-3/4 tsp salt
Coconut
 
DIRECTIONS
Mix all ingredients together in a bowl. Form golf size balls with mixture and roll each ball in a bowl of shredded coconut to coat. Freeze for 20 minutes to allow mixture to firm. Store in the refrigerator.
