I love salads but I have to admit, the lazy side of me sometimes balks at the thought of having to wash all that produce and then chop everything up. It’s embarrassing really considering salads are one of the easiest foods to prepare. Pretty sure already washed and chopped lettuce bags were made just for me. Enter today’s salad: no lettuce to wash, though you do have two vegetables to chop. But I can handle two. Growing up, my mom would make a lot of lettuce-less salads: tabbouleh, broccoli/cauliflower, and this cucumber/tomato/mint salad. We were salad fanatics and had to have a salad with every meal so you can imagine how often these were in rotation. It was a healthy way to grow up and because of that, I try to incorporate salad into meals several times a week. This salad is as simple as you can get and I love how fresh it tastes. No sugars or preservatives and you can opt out of the cheese if you prefer an even lighter salad.

Minty Feta Cucumber - Tomato Salad

Feta mint cucumber tomato salad

Ingredients

  • 3 tomatoes, chopped
  • 1 English cucumber, chopped
  • Juice from half of a lemon
  • 2 T dried mint
  • 2 T olive oil
  • Salt and Pepper to taste
  • Crumbled feta cheese

Instructions

  1. In a bowl, mix tomatoes, cucumbers, mint, olive oil and lemon.
  2. Season with salt and pepper.
  3. Sprinkle crumbled feta cheese on top.
