Mashed Purple Potatoes w. Whipped Goat Cheese

Mashed baby purple potatoes and carrots topped with whipped goat cheese cream, toasted pine nuts and basil - so good and so colorful!

I love flying Jet Blue. You get treated like a human, there is a healthy amount of space and best of all, you have access to unlimited snacks. Even though I was really tempted by the cookies the last time I flew, my go-to snacks are the mini bags of blue chips. One time they even had sweet potato mixed in and it was heaven. Call me crazy but even after eating several bags, it never struck me that I could find potatoes similar to these at a specialty grocery store. So when I saw them on Melissa’s website, I had to try them for real.

These baby potatoes are just plain awesome. 1) they are mini sized and as we all discussed earlier, anything in miniature form is 10x better than the norm and 2) they are purple. You really can’t ask for a better combination. I had a fun time creating this recipe – it was a combination of several things I had on hand and a short mashed potato tasting. The goat cheese really pulls everything together and the pine nuts add delicious texture.

MASHED PURPLE POTATOES WITH PINE NUTS AND WHIPPED GOAT CHEESE
 
INGREDIENTS
6 baby purple potatoes
3 carrots
3/4 tsp salt
1/4 c milk
 
2 T heavy whipping cream
2 T goat cheese
 
Garnish: toasted pine nuts, chopped basil 
 
DIRECTIONS
Chop potatoes and carrots into chunks. Place in a small saucepan with water and bring to a boil. Turn to medium heat and cook until both are tender. Remove from heat, drain and mash. Add salt and milk and stir well. 
 
In a small bowl, whip cream and goat cheese together. 
 
Place mashed potatoes and carrots in a serving dish and top with whipped goat cheese. Garnish with pine nuts and basil.
