On our trip to Key West, we stopped by a food truck serving tropical quesadillas. I discovered them through my trusty Trip Advisor, since I always read reviews on a restaurant before trying them out (the one time we didn’t, we had a case of food poisoning). The menu item that stuck out for me was their mango-brie quesadillas. And so, of course, I told A that we have to stop by and grab one to share. It was delicious. Unlike anything I had ever had before. The flavors blended so well and it was absolutely amazing.
So what does a food blogger do when she encounters an out-of-this-world dish? She recreates it.
MANGO-BRIE CHICKEN QUESADILLAS
Yield: 3 quesadillas
1 ripe mango, diced
6 T brie
3 oz havarti, sliced (you can sub in mozzarella or parmesan)
1 cooked chicken breast, shredded
1/3 c cilantro, minced
6 whole wheat tortillas
Spread 1 T brie on each tortilla. Sprinkle 1 oz of havarti slices on three of the tortillas. On the same tortillas, arrange and evenly distribute mango slices, shredded chicken and minced cilantro. Top with plain brie tortillas. Heat in a toaster oven or regular oven on 350F until cheese begins to melt and tops turn golden.
I wrote about TJ Maxx a while ago here. Today’s post has been a long time in coming and I’ve finally gathered my thoughts concisely enough to create this article on the 6 Things You Didn’t Know TJMaxx.com Carried. Before I get ahead of myself, yes, TJ Maxx does have a website where you can shop numerous favorites…
Of course I had to compile a collage of “best of” in the fashion and outfit department. People often ask me which part of my blog I love most and I think it’s one of the hardest questions to ask. I love it all: fashion, food, travel, the miscellaneous. Every single aspect. And so here…
Can you guys believe it’s fall already? I just recently found this top and I love how different it is from the typical off shoulder tops we see. While the majority are flowy (which I totally love, by the way), this one is fitted and has a slight crop. It was fun pairing it with…
I embarrass myself around edamame. Like the other day, A and I were at our favorite Asian Fusion restaurant and as is typical, they started us off with a complimentary dish of edamame (see why I love this place?) I finished the entire plate in about 5 minutes, all by myself. I swear the stuff…
Why I shop DSW I love DSW. And I’ve often been asked how I get such good deals and find such cute shoes there. The store (stands for Designer Shoe Warehouse) has a ridiculously large collection of shoes not only in stores but also online. In fact, its online selection is at least twice that of…
This fall I made the amazing discovery of rumchata: horchata + rum. (FYI…I’ve never actually tried horchata before but I imagine I would love it and have mentally added it to my list of things to try in the near future.) But in the meantime, I’ve been enjoying small tastes of rumchata, spiking the whipped cream…
