On our trip to Key West, we stopped by a food truck serving tropical quesadillas. I discovered them through my trusty Trip Advisor, since I always read reviews on a restaurant before trying them out (the one time we didn’t, we had a case of food poisoning). The menu item that stuck out for me was their mango-brie quesadillas. And so, of course, I told A that we have to stop by and grab one to share. It was delicious. Unlike anything I had ever had before. The flavors blended so well and it was absolutely amazing.
So what does a food blogger do when she encounters an out-of-this-world dish? She recreates it.
MANGO-BRIE CHICKEN QUESADILLAS
Yield: 3 quesadillas
1 ripe mango, diced
6 T brie
3 oz havarti, sliced (you can sub in mozzarella or parmesan)
1 cooked chicken breast, shredded
1/3 c cilantro, minced
6 whole wheat tortillas
Spread 1 T brie on each tortilla. Sprinkle 1 oz of havarti slices on three of the tortillas. On the same tortillas, arrange and evenly distribute mango slices, shredded chicken and minced cilantro. Top with plain brie tortillas. Heat in a toaster oven or regular oven on 350F until cheese begins to melt and tops turn golden.
Serve with sour cream.
