Lightened Up Curried Tuna Salad

Isn’t it funny how our tastebuds work? What tastes amazing to one person might taste absolutely wretched to another. Tastebuds are also influenced by past experiences. For the longest time, A hated mushrooms because he had always had canned mushrooms. Soon after we got married, he tried fresh mushrooms and loved them. When I was younger, I had a bad experience with canned tuna; I was over at a friend’s house and her mom made us a tuna, onion and tomato sandwich. I hated onions and could barely get the sandwich down. And if you know me, I can usually eat anything so this was an especially memorable experience. To this day, I have a hard time eating canned tuna because unfortunately, I remember that sandwich every time I smell it.

A, on the other hand, loves tuna salad and has been asking me to make it as it’s light and makes for great lunches. I had a few cans in the closet and decided to use curry, cumin, coriander and mustard to create this curried tuna salad recipe. The result was delicious and it made for a great dinner! And the funniest part? A decided he wanted a thick tomato slice on his and I copied him. Much to my dismay, I kept thinking of that sandwich from long ago so I removed the tomato and happily kept eating. So enjoy this with a tomato or without; its great both ways!

Yield: 2 servings

Curried Tuna Salad over Kale

Curried tuna salad over kale

Ingredients

  • 2 4oz cans canned tuna
  • 1/3 c sour cream
  • 3/4 tsp curry powder
  • 1/4 tsp cumin
  • pinch cayenne pepper
  • 1/8 tsp paprika
  • 1/4 tsp dry mustard
  • 1/4 tsp turmeric
  • 1/4 tsp coriander
  • 1/2 tsp salt
  • 3 tsp lemon juice
  • 1 garlic clove, minced

Instructions

  1. Combine all ingredients together in a large bowl. Mix thoroughly.
  2. Serve over bread. Kale and tomato optional.

  1. I always find that funny, too, with how our tastebuds are all different and how experiences can effect what we do or don’t like to eat. I don’t really have any bad foo experiences that have made me hate stuff, but Dave definitely has. He used to not like beets or tomatoes, because, like A, he had only had canned versions (or overly processed ones), but once I gave him fresh ones, he fell in love 🙂 Love this curry version of tuna salad and your pictures are gorgeous!

  2. I never liked peas (my mom always used can peas) until I tried frozen peas (yum!). This salad mixture sounds delish – think I’d sub in chicken for tuna. I have a certain way that I make tuna and can’t seem to vary the recipe 😛 Nothing special or anything .. I just have to make tuna with mayo, season salt, dill 🙂
