Lemon Basil Beef Kebabs
We grill about 90% of our dinners during summer. Some people would say it’s healthier but really we’re just lazy. Grilling = less time cooking and cleaning not to mention the fact that grilled food tastes 100x better. This recipe is one I threw together a few nights ago – I have a basil plant (you may have seen it on Snapchat |fashionedible| and because it’s so big now, it’s been renamed the basil tree) which needed a trim and a few lemons that I wanted to use up. I had just made a huge batch of pesto (seriously. this basil tree is no joke.) and so I threw some of my favorite ingredients together into these kebabs. Typically, I make Middle Eastern parsley and beef kebabs but this time I wanted something a bit different. We enjoyed them over rice and with a glass of wine!
LEMON BASIL BEEF KEBABS
INGREDIENTS
25 basil leaves
4 cloves, minced
2 T pistachios
1/2 tsp salt
1/4 tsp pepper
1 T lemon juice
1 pound ground beef*
Kebab skewers
Lemon juice
*If using lean ground beef, add 2 T of olive oil to the beef.
DIRECTIONS
Process basil, cloves, pistachios, salt, pepper and lemon together in a food processor. Add to beef and mix. Form beef kebabs around skewers. Grill kebabs until desired doneness. Garnish with an extra squeeze of lemon juice.
