If you look closely at these photos, you’ll notice a few “Greece” coasters – this was one of our souvenirs from our trip and while it was a cute purchase, it was actually one we needed. Since today’s salad recipe is actually a replica of a salad we enjoyed during our trip, I thought it was pretty fitting to include these marble coasters. I learned a thing or two while putting this salad together…a) I don’t use sundried tomatoes or currants NEARLY enough b) kale really does taste good when paired with the right ingredients c) who knew that currants and tomatoes complement each other so well? The original salad did not actually have kale (they used lettuce) and to be honest, I have no idea what type of dressing they employed. But you can never go wrong with a garlicky-olive oil dressing!

KALE + SUNDRIED TOMATO SALAD W. PINE NUTS + CURRANTS

INGREDIENTS
5 c kale
2 c cherry tomatoes
1 c sundried tomatoes
1/4 c currants
1/4 c pine nuts
1/4 c grated parmesan

Dressing
1/4 c olive oil
1/4 tsp salt
1 garlic clove, minced
1 tsp parmesan cheese
1 tsp of fine herbs (even mixture of dried parsley, chives, chervil and tarragon)

DIRECTIONS
Layer kale, tomatoes, currants and pine nuts in a bowl. Top with parmesan cheese.

In a small bowl, mix dressing ingredients together. Serve with salad.

  1. The Greece coasters are so fun and what a great memento from your trip – useful and decorative! I love sundried tomato, but T isn’t a fan, so I don’t get it much. This looks so tasty!

  2. Love the combo of currants, pine nuts and sundried tomatoes. We brought some back from Italy and I so can’t wait to cook with them! And loving those coasters you picked up in Greece!
