Homemade Pancakes – Gluten Free!

GLUTEN FREE PANCAKES RECIPE AND INGREDIENTS
1/4 c rice flour
1/3 c brown rice flour
1 tsp baking powder
2 T sugar
3 eggs
2/3 c milk
2 T flaxseed, ground
4 T water
Butter
In a small container, mix flaxseed and water together. Set aside.
Mix flours, baking powder and sugar together in a large bowl. In a separate bowl, whisk eggs and milk together – add egg/milk mixture to the flour mixture and combine. Add flaxseed mixture and mix well.
Place 1 T butter in a large saucepan and heat on med-high. Once butter is lightly sizzling, add pancake batter, about 4-5″ in diameter. Cook about 1 minute per side.
