Homemade Pancakes – Gluten Free!

Remember when I thought these gluten free coconut pancakes were the best ever? Well, I take that back. Today’s pancake recipe beats them hands down. These are much much easier to work with and for those that despise coconut, they do not contain an ounce of the stuff.
I think they taste almost exactly like normal pancakes, though of course, they aren’t as “fluffy.” But they’re fluffy enough and like the others, use no gums. If you’re in the mood for a coconut-flavored breakfast, then opt for the first recipe. However, if you just want plain ol’ pancakes, then this will be your go-to.

1/4 c rice flour
1/3 c brown rice flour
1 tsp baking powder
2 T sugar
3 eggs
2/3 c milk
2 T flaxseed, ground
4 T water

In a small container, mix flaxseed and water together. Set aside. 

Mix flours, baking powder and sugar together in a large bowl. In a separate bowl, whisk eggs and milk together – add egg/milk mixture to the flour mixture and combine. Add flaxseed mixture and mix well. 

Place 1 T butter in a large saucepan and heat on med-high. Once butter is lightly sizzling, add pancake batter, about 4-5″ in diameter. Cook about 1 minute per side.
