I love pizza. I mean love. It’s one of those foods that I have to exercise some serious self-control over. To put it in plain terms, when I was in my late teens, my best friend and I would eat a whole large pizza by ourselves over lunch break when we worked together over the summer.
I wish I was joking.
I don’t even want to think about all the calories we happily shoved down our throats. But it was worth every bite.
The hubs shares my affinity for pizza as well but unfortunately, can only take so much gluten and so we try not to eat it often. Pizza is a luxury now and when I do make it, it’s usually more than just cheese and dough. I like to play around with pizza flavors, especially since specialty pizzas tend to be pricy at restaurants. I’ve tried basil pesto and roasted tomato pizza and eggplant roasted red pepper pizza, my absolute favorite.
This pizza is a twist on the classic ham, bbq and pineapple pizza with the addition of cilantro and the optional hint of blue cheese. I’ve made this combo twice and we love it.

BBQ HAM AND PINEAPPLE PIZZA
1/4 c bbq sauce
1/4 cilantro, minced
3/4 c pineapple chunks
6 slices of deli ham, diced
1-2 oz cheddar cheese, shredded
1 1/2 – 2 oz mozzarella, shredded
1 T blue cheese, optional
1 medium pizza crust (my recipe below)
Prebake dough on 450F for 3 minutes. Top with bbq sauce and remaining toppings. Bake 15-20 minutes or until crust turns golden.
Pizza Crust (recipe from my mom)
Yield: about 4 medium sized pizza crusts
1 1/4 cup water
1 T yeast
1 tsp sugar
2 T oil
1 tsp salt
3 c (+ more as needed) flour
Mix water, yeast and sugar and allow to rest for 5 minutes
Add in oil, salt and flour. Knead dough and add more flour as needed until dough comes together. Cover and allow to rise for at least 1 hour.
Divide dough into 4 pieces and roll out. Use for your favorite pizza.
