I love pizza. I mean love. It’s one of those foods that I have to exercise some serious self-control over. To put it in plain terms, when I was in my late teens, my best friend and I would eat a whole large pizza by ourselves over lunch break when we worked together over the summer.
I wish I was joking.
I don’t even want to think about all the calories we happily shoved down our throats. But it was worth every bite.
The hubs shares my affinity for pizza as well but unfortunately, can only take so much gluten and so we try not to eat it often. Pizza is a luxury now and when I do make it, it’s usually more than just cheese and dough. I like to play around with pizza flavors, especially since specialty pizzas tend to be pricy at restaurants. I’ve tried basil pesto and roasted tomato pizza and eggplant roasted red pepper pizza, my absolute favorite.
This pizza is a twist on the classic ham, bbq and pineapple pizza with the addition of cilantro and the optional hint of blue cheese. I’ve made this combo twice and we love it.
So tell me…what are your favorite pizza toppings?
BBQ HAM AND PINEAPPLE PIZZA
1/4 c bbq sauce
1/4 cilantro, minced
3/4 c pineapple chunks
6 slices of deli ham, diced
1-2 oz cheddar cheese, shredded
1 1/2 – 2 oz mozzarella, shredded
1 T blue cheese, optional
1 medium pizza crust (my recipe below)
Prebake dough on 450F for 3 minutes. Top with bbq sauce and remaining toppings. Bake 15-20 minutes or until crust turns golden.
Pizza Crust (recipe from my mom)
Yield: about 4 medium sized pizza crusts
1 1/4 cup water
1 T yeast
1 tsp sugar
2 T oil
1 tsp salt
3 c (+ more as needed) flour
Mix water, yeast and sugar and allow to rest for 5 minutes
Add in oil, salt and flour. Knead dough and add more flour as needed until dough comes together. Cover and allow to rise for at least 1 hour.
Divide dough into 4 pieces and roll out. Use for your favorite pizza.
I just recently confiscated my waffle maker from my parent’s house. I had lent it to them a few years back and completely forgot about it – how is that even possible?! And so a few weeks ago, on a particularly gloomy snow day, the hubs and I were trying to figure out what to…
Why I shop DSW I love DSW. And I’ve often been asked how I get such good deals and find such cute shoes there. The store (stands for Designer Shoe Warehouse) has a ridiculously large collection of shoes not only in stores but also online. In fact, its online selection is at least twice that of…
I am not much of a decorator. In fact, I have very few decorations laying around come Thanksgiving and Christmas. It’s not that I don’t like the holidays – I love getting together with family, eating good food, celebrating the meanings of each, and of course, drinking A LOT of hot chocolate! I’m just…
This blueberry fig sparkler has me wishing it were summer all over again. The best thing about blueberries (besides their taste, nutrients and the fact they’re my favorite fruit) is that you can freeze them in winter and use them in all sorts of goodies. I use frozen blueberries in my smoothies ALL THE TIME….
Can you guys believe how fast this week went? This month? We are almost to February and I feel like I’m so behind on everything. Story of my life. Let’s comfort ourselves with this mac and cheese. Ok. First, I need to share my love of mascarpone. This cheese is amazing. Yes, it’s expensive but…
Today’s recipe is a simple peanut butter oatmeal breakfast smoothie that truly can double as dessert. It’s not low in calories (darn you peanut butter for raising the bar) but it is healthy and very filling, cutting out the incessant need for snacking that usually succeeds holiday binging. Sweet enough for dessert and wholesome enough…
