Grilled Pineapple Burgers with Cilantro-Roasted Red Pepper Pesto

I know burgers are a “man’s food” but I have to admit that I could eat a burger every week and not get bored. And even though I love beef burgers, I’m not picky either – I’ll eat chicken, veggie (portobellos…mmmm), you name it. One of my favorite things to do is to play around with the flavors going into and outside of the burger.

Today’s dish creates a cilantro-red pepper pesto which tops a semi-plain beef burger. Pineapple complements the sweetness of the red pepper pesto. Grilling is best for this recipe as both the burgers and pineapple are grilled.

Grilled Pineapple Burgers with Cilantro-Roasted Red Pepper Pesto

GRILLED PINEAPPLE BURGERS WITH ROASTED RED PEPPER PESTO

INGREDIENTS

Burgers
1 pound ground beef
1 egg
1/2 c oats
Salt and Pepper

Pineapple slices, grilled
Homemade Rolls or hamburger buns
Fontina cheese, sliced
Pesto (recipe below)

Pesto
1 c cilantro, chopped
2 T pistachios, chopped
2 garlic cloves
1/4 c + 1 T olive oil


DIRECTIONS

Burgers
Mix beef, egg and oats together and season with salt and pepper. Form into patties. Grill until desired level of doneness has been achieved and top with cheese slices. 

Spoon 2-3 T of pesto on to each burger bun. Top with burgers and pineapple slices.

In a food processor, combine cilantro, roasted red peppers, pistachios, garlic and olive oil and process until smooth.
