One of my favorite things about our Europe trip was the food. Mainly the breads, pastries and desserts that are unparalleled here in the US. However, one surprising food that made an impression on me was the cereal. I tried cereal at the bed & breakfast and at the hotel on our last night and both were amazing, like nothing I have ever had before.
Today’s recipe is my version of both of them combined. It’s a super easy cereal to make – I used store-bought items but you can use homemade if you prefer. I also made it gluten-free but you can just as easily use non gluten-free ingredients. I provided measurements but you really can alter all measurements to suit your preferences (like increasing the amount of chocolate). This has turned into my cereal of choice – so much flavor and variety that you’ll never get bored.
GRANOLA-RICE CEREAL WITH CHOCOLATE, DRIED FRUIT AND COCONUT
Yield: about 5 cups
1/2 c plain granola (gluten-free)
1 c chocolate crisp rice cereal (I used Bear River Valley’s gluten free Choco Chomp)
2 c rolled oats (gluten-free)
1/2 c sweetened dried banana chips, chopped
1/4 c shredded coconut
2 T roasted coconut chips
1/4 c dried apple chips, chopped
1/4 c walnuts, chopped
2 T chocolate, chopped (refrigerate before chopping)
Mix all ingredients together in a bowl. Store in an airtight container.
Our second destination was the Alsace region of France. It took about 5+ hours to drive there from the airport (we took the metro back to the airport so we didn’t have to drive a vehicle in Paris). Our rental home was located in the mountains of the Munster area – it was a gorgeous…
I’m so excited to share this coconut curry recipe with you today. My mom used to make this years ago and I remember it being one of my favorite recipes. The flavors are all so different but somehow they all combine together and make it work. My best friend made an unladylike face when…
A comfortable winter outfit like this one is my go-to when the weather gets gloomy and cold. Winter is in full swing now and when I’m not home huddled under a blanket or walking around in a scarf and slippers, I’m out and about in boots and a thick winter coat. As I’m sure you guessed,…
Who wants to go back on vacation? It was heaven taking off a few days and spending time with family and friends. I never really get to take off work that many days in a row so it was pure relaxation. This past Saturday was the epitome of laziness. We stayed home, watched 3 movies…
Good morning Wednesday! I realize I have a problem – these pants have been on repeat for weeks but that’s just because I wore them every other day on the trip. I am so glad I splurged on them and I’m already debating whether or not to grab another pair of petites from Topshop. I…
These chocolate cupcakes turned me into a chocolate lover for the day. And I think this icing has instantly become my favorite icing. It holds its shape and it is so easy to make. If you scroll down to the recipe, you can see that the icing is mainly comprised of sweetened condensed milk. Does…
