One of my favorite things about our Europe trip was the food. Mainly the breads, pastries and desserts that are unparalleled here in the US. However, one surprising food that made an impression on me was the cereal. I tried cereal at the bed & breakfast and at the hotel on our last night and both were amazing, like nothing I have ever had before.
Today’s recipe is my version of both of them combined. It’s a super easy cereal to make – I used store-bought items but you can use homemade if you prefer. I also made it gluten-free but you can just as easily use non gluten-free ingredients. I provided measurements but you really can alter all measurements to suit your preferences (like increasing the amount of chocolate). This has turned into my cereal of choice – so much flavor and variety that you’ll never get bored.
GRANOLA-RICE CEREAL WITH CHOCOLATE, DRIED FRUIT AND COCONUT
Yield: about 5 cups
1/2 c plain granola (gluten-free)
1 c chocolate crisp rice cereal (I used Bear River Valley’s gluten free Choco Chomp)
2 c rolled oats (gluten-free)
1/2 c sweetened dried banana chips, chopped
1/4 c shredded coconut
2 T roasted coconut chips
1/4 c dried apple chips, chopped
1/4 c walnuts, chopped
2 T chocolate, chopped (refrigerate before chopping)
Mix all ingredients together in a bowl. Store in an airtight container.
Today’s recipe is a perfect Christmas meal recipe – it’s a comfort food, it’s a cross between dinner and dessert, and it’s a crowd pleaser. My love affair with sweet potatoes began when I tried this dish years ago and now I’ve expanded into sweet potato fries and roasted vegetables. I’d have to say my favorite part…
I call anything over 7 days a long vacation. And while I love long vacations, packing for them can be a struggle at times, especially when you’ve got an international flight with baggage restrictions to worry about. That means you can’t take 5 handbags but you might need to stick to 2 or 3. Anything…
We had these burgers a few nights ago out of a desperate craving for wings. These made up for it and more. Seriously so good. While I was putting them together, I realized I didn’t have any rolls so I whipped up my trusty Hamburger Rolls that take minutes to make and only 30 minutes to rise….
I’m pretty adventuresome when it comes to trying new things. I’m always the one dragging us to a new restaurant, taking new roads, reading about new travel destinations and ordering new things off the menu. Sometimes things backfire on me and I wonder why I didn’t just stick to the usual. Like the one time…
I can honestly say this is the easiest recipe I own. Not only does it require a minuscule amount of ingredients but it is incredibly simple to put together. And I do it all in the same baking dish. This recipe was my sister’s favorite growing up. Now it’s the hubs’. If it were up…
