One of my favorite things about our Europe trip was the food. Mainly the breads, pastries and desserts that are unparalleled here in the US. However, one surprising food that made an impression on me was the cereal. I tried cereal at the bed & breakfast and at the hotel on our last night and both were amazing, like nothing I have ever had before.
Today’s recipe is my version of both of them combined. It’s a super easy cereal to make – I used store-bought items but you can use homemade if you prefer. I also made it gluten-free but you can just as easily use non gluten-free ingredients. I provided measurements but you really can alter all measurements to suit your preferences (like increasing the amount of chocolate). This has turned into my cereal of choice – so much flavor and variety that you’ll never get bored.
GRANOLA-RICE CEREAL WITH CHOCOLATE, DRIED FRUIT AND COCONUT
Yield: about 5 cups
1/2 c plain granola (gluten-free)
1 c chocolate crisp rice cereal (I used Bear River Valley’s gluten free Choco Chomp)
2 c rolled oats (gluten-free)
1/2 c sweetened dried banana chips, chopped
1/4 c shredded coconut
2 T roasted coconut chips
1/4 c dried apple chips, chopped
1/4 c walnuts, chopped
2 T chocolate, chopped (refrigerate before chopping)
Mix all ingredients together in a bowl. Store in an airtight container.
