Energy bites are the way to go if you need something fast, easy to make and healthy. They’re great snacks for when you’re traveling or need something to give you a bit of an energy boost. And best of all, they’re so quick to whip up. These took all of five minutes to make. Maybe even 4 minutes. They require only 5 ingredients and they’re sugarless (honey is the sweetener), gluten-free and vegan.
FYI – you can opt out of the coconut if you prefer.
GLUTEN-FREE VEGAN ALMOND ENERGY BITES Yield: 14 balls INGREDIENTS 3 T almond butter* 1/4 c honey 1 1/2 c oats 3 T almonds 2 T coconut flakes *I used Justin’s maple almond butter DIRECTIONS Mix all ingredients together in a bowl. Form into balls. Refrigerate.

I made these yesterday! Very quick and yummy! Perfect for my status as a ravenous pregnant lady whose new stove hasn’t arrived yet. I tried skimping on the honey because my Aldi almond butter and coconut both came with added sugar, but I ended up adding honey back in to help them stick together.
