Gluten-Free Vegan Almond Energy Bites
GLUTEN-FREE VEGAN ALMOND ENERGY BITES
Yield: 14 balls
INGREDIENTS
3 T almond butter*
1/4 c honey
1 1/2 c oats
3 T almonds
2 T coconut flakes
*I used Justin’s maple almond butter
DIRECTIONS
Mix all ingredients together in a bowl. Form into balls. Refrigerate.

I made these yesterday! Very quick and yummy! Perfect for my status as a ravenous pregnant lady whose new stove hasn’t arrived yet. I tried skimping on the honey because my Aldi almond butter and coconut both came with added sugar, but I ended up adding honey back in to help them stick together.
Honey definitely helps them stay together! I’m so glad you liked them – they’re a great snack!
