Fresh Salsa Recipe

I love summer cooking. It means more pizza and burgers. And more fruits and vegetables that are fresh. One of my favorite ways to use said vegetables is in this fresh salsa recipe. Perfectly ripe tomatoes are one of the key ingredients.

Nothing beats homemade salsa. So many flavors exist that never survive the canning process in the store-bought jarred stuff. Even the most expensive brands.

I should note that this salsa is chunky. If you are not a fan of chunky, you could probably blend the salsa a little in a blender. We actually prefer our salsa chunked so we always serve it like this. Plus, it’s one less dish to worry about.

Because I’m that lazy…

Rolling the lime on the countertop before you cut it will help you squeeze out more juice. I always just take the lime and press/roll with a back and forth motion for about 30 seconds. The fruit becomes extremely soft and once cut, the juices will flow much better. I’ve also done this with lemons.

FRESH SALSA RECIPE & INGREDIENTS

2-3 tomatoes, diced
1 green pepper, diced
large bunch of cilantro (about 1/2 cup minced)
Juice from one lime
2 garlic cloves, minced
1/4 – 1/2 tsp salt

Mix all ingredients together in a bowl and serve with chips.

Eat with chips or just with a spoon. It’s that good.
