Copycat Trader Joes Kale Edamame Salad

I embarrass myself around edamame. Like the other day, A and I were at our favorite Asian Fusion restaurant and as is typical, they started us off with a complimentary dish of edamame (see why I love this place?) I finished the entire plate in about 5 minutes, all by myself. I swear the stuff has addictive properties.
So you can imagine how excited I was when my mom and I found an edamame (and kale) salad at Trader Joes. Salads seem to be a hit or miss in most places so I really wasn’t sure what to expect but since I was starving, I was hoping for the best. We devoured the salad in minutes and instantly regretted not grabbing one for each of us. The original does use sliced green onions but since I’m not a huge fan of raw onions, I chose not to use them. Feel free to add some type of onion if you love the taste!

Copycat Trader Joes kale edamame salad
Ingredients
- 5 oz kale + spring mix
- 4 T edamame, shelled
- 2 T cranberries
- 2 T blanched almonds
Creamy Lemon Dressing
- 2 T olive oil
- 1/2 lemon, juiced
- 2 tsp mustard
- 3 T sour cream
- 1 tsp brown rice syrup
- 1/4 tsp garlic pepper
- 1/2 tsp salt
Instructions
- Place kale in a bowl. Top with edamame, cranberries and almonds.
- Mix ingredients for dressing together in a small bowl. Whisk well. Serve with salad.
