It’s no secret that I’ve got a sweet tooth. And sometimes that sweet tooth involves desserts that the hubs isn’t a fan of (i.e. anything involving peanut butter). Most of the time, I end up not making those types of desserts because I don’t want to get stuck eating the whole thing and it’s not worth the time involved if I’m the only one enjoying it. This dessert, however, is the perfect solution to those times in life when you want something sweet, chocolatey, & peanut-buttery but you a) don’t want to spend 5 hours in the kitchen making it and b) you only want a small amount, not 50 servings to feed the masses. This is the perfect go-to dessert for any sweet tooth cravings.
And did I mention it’s NO-BAKE?!
CHOCOLATE PEANUT BUTTER DATE TRUFFLES RECIPE AND INGREDIENTS 1 cup peanut butter, chunky (if using smooth, add 1/4 c chopped peanuts) 1 c powdered sugar 3/4 c chopped medjool dates (or chopped packaged dates) 1 T butter 2 oz sweet chocolate, melted Mix peanut butter, sugar, dates and butter together. If mixture is too soft, place in freezer for a few minutes to harden. Working quickly, form into truffles and roll one side in melted chocolate, Place on wax paper. Store in an airtight container in the refrigerator (store in the freezer if your truffles are not holding their shape perfectly and allow 2-3 minutes to soften before serving).
