Chocolate Covered Caramel Pretzel Brownies
We went to Panera Bread last night for the first time in a LONG time. I’ve probably shared my love-hate relationship of Panera; hate for their price hikes and the food quantity inconsistencies across each restaurant and love of their food. Yesterday was no different – I ordered their newest Ancient Grain & Arugula Salad (with apples, grapes…) – it was SO GOOD and fairly low in calories. Add it to your must-try list.
I don’t know why I’m talking healthy eats, though, because these brownies are anything but. I made these last week and instantly shared the calories with family and neighbors who all appreciated them greatly. These caramel pretzel brownies are to die for – even A loved them (he still doesn’t know there are pretzels inside. shhh). Basically it’s a made-from-scratch brownie, stuffed with caramel and pretzels, and topped with white and dark chocolate. Serve it warm and with a scoop of ice cream for an extra rich treat. Yum.

CHOCOLATE COVERED CARAMEL PRETZEL BROWNIES
INGREDIENTS
12 T butter, softened
1 c sugar
2 T honey
2 eggs
1 1/2 tsp vanilla extract
1 c flour
1/4 c cocoa powder
1/2 tsp baking powder
1/4 tsp salt
8 UTZ pretzel rods, crushed
2 T butter
4 soft caramel candy chews (approximately 1/4 c of caramel)
1 T honey
White chocolate, garnish
Dark chocolate, garnish
Crushed pretzel, garnish
DIRECTIONS
Grease and flour an 8×6 glass pan*. Preheat oven to 350F.
In a large bowl, beat butter, sugar, honey, eggs and vanilla together. In a separate bowl, mix flour, cocoa, baking powder and salt. Add wet ingredients to dry ingredients and stir well. Set aside.
In a small pan on low heat, melt butter and caramel chews together. Add pretzels and honey.
Pour half of brownie mixture into glass pan. Sprinkle pretzel mixture over top then top with remaining brownie mixture. Bake for 55-60 minutes, testing brownies with a toothpick for doneness. Top with white and dark chocolate (wait a few minutes for chocolates to melt) and a sprinkle of crushed pretzel for garnish.
*If using an 8×8 pan, decrease bake time to 45-50 minutes. Test for doneness (toothpick inserted into the middle should come out clean)
