Buttermilk Pear Pie with a Crumble Topping

I’ve been on a baking spree lately which is great for the blog but terrible for our diets. This is the third pear dessert I have made within the last two weeks and I still have more pears to use. I think I may be freezing the remainder for fear of developing an aversion to pears. Ever have that happen? You eat way too much of something and then suddenly, you cringe at the idea of eating it again? Yes, tried that once with cake. Epic fail.
This is a buttermilk pear pie with a very slight custard base that tastes amazing cold and warm (think warm with a scoop of vanilla ice cream). BUTTERMILK PEAR PIE WITH OAT TOPPING
 
INGREDIENTS
Crust
1 1/4 c + 2 T flour
1/4 tsp salt
7 T butter, cold
4 T cold water
 
Filling
4-5 c sliced pears
1 T butter
1/4 c brown sugar
 
1/2 tsp cinnamon
2 T flour
1/4 c brown sugar
2 T white sugar
2 eggs
1 c buttermilk
1 tsp vanilla
 
Topping
2 T flour
1/3 c oats
1/3 c brown sugar
2 T butter
DIRECTIONS
For crust…Mix flour and salt together in a bowl. Cut in butter and mix with fingers until mixture resembles coarse meal. Add water, one tablespoon at a time and use fork to combine mixture together. Do not over mix. Freeze for 15 minutes. Roll out and place in pie dish. 
 
For filling…Cook pears with 1 T butter and 1/4 c brown sugar on med-high for 5 minutes. Pour into crust. 
 
In a bowl, combine cinnamon, flour, 1/4 c brown sugar and white sugar together. In a separate bowl, whisk eggs together and add buttermilk and vanilla. Mix with flour mixture and pour over pears. 
For topping…Mix together flour, oats and brown sugar and use your fingers to blend butter in until it resembles coarse meal. 
 
*Do not add topping yet*
 
Bake at 350F for 30 minutes. Reduce heat to 300F, *sprinkle topping over pie*, and bake for 25 minutes or until toothpick inserted comes out clean. Serve with vanilla ice-cream.
