Blueberry Peach Crisp
I’m sure you guys have figured it out by now but I am a raging sweetsaholic – sometimes I can keep it under tight control but it does get the best of me several times a week. Like I always have to end dinner with dessert even though I may be stuffed and about to pass out from the huge course we just ate minutes ago. That sweet tooth craving always rears its pretty little head and thank goodness there’s always something that can satisfy it. Usually ice cream, fruit if I’m being good, but if we’re lucky, a real dessert like this blueberry peach crisp.
Crisps are one of my favorite summer desserts. I love the mixture of sweet and slightly salty and the delicious combinations of fruit you can add. I know blueberries are now out of season and peaches are nearing the end of theirs but this crisp is perfect for an end-of-summer BBQ or picnic you may have planned. Labor Day weekend is coming up soon and we already have a neighborhood bash planned so this would be an excellent choice to bring along. I love crisps topped with a small scoop of ice cream but I know others who love a dash of whipped cream as well.
INGREDIENTS
Filling
4 c ripe peaches, sliced
2 c blueberries
3 T flour
1/4 c sugar
2 T butter, melted
Topping
1 1/4 c old-fashioned oats
1/2 c flour
1/4 c + 1 T walnuts
1 c packed brown sugar
5 T butter, softened
DIRECTIONS
Preheat oven to 400F. In a large bowl, mix flour, sugar and butter together. Add to fruit and mix until well coated. Place on the bottom of a baking dish. In a small bowl, combine oats, flour, walnuts, and sugar. Use fingers to incorporate butter into oat mixture. Sprinkle oat mixture overtop fruit. Bake for 30 minutes. Cool for 5 minutes and serve.
