Best of EDIBLES in 2015
Putting together this collage of favorites from 2015 was a lot of fun. It’s crazy to see just how many recipes I created/made and how my photography has improved over the past year AND how much nicer the blog layout is in general. This just goes to show that I’m still learning throughout this roller coaster of a ride called blogging. 2015 definitely had its ups and downs but I’m happy with the direction it has taken and I’m excited for 2016!
And without further ado, here are a few highlights from 2015…

Almond Crusted Mixed Berry Tart – this is a super easy tart to make, perfect for summer days. Use one type of berry or a combination of all three. Miniature sizing makes it that much cuter!
Banana Crepes with Caramel Mascarpone Filling – This is still one of my favorite desserts. Quick to throw together and helps you use up all your frozen bananas. Also, the combination of caramel and mascarpone has to be one of the best tasting creams I have ever had. Perfect amount of sweetness and fluffiness without having to whip up heavy whipping cream.
Havarti Fig Butter Pastries with Honey – Elegant and delicate, a mix of sweet and salty for those who prefer lightly sweetened desserts.
Chocolate Covered Caramel Pretzel Brownies – You want to bring on the WOW factor, you must make these. They are EASY. GOOD. ADDICTIVE. I don’t think I need to say more!
Fig Ricotta Milkshakes – A bit of a #tbt to Greece, these milkshakes are an unexpected mixture of fig butter and ricotta. Be sure to make enough – you’ll find yourself wishing for more.
Quinoa Sweet Potato Salad – I never realized how much I love salad until this past year. I’m talking unique salads like this one – full of healthy and flavorful ingredients like sweet potatoes, quinoa, lemon, and cranberries. Don’t forget the feta!
Fig Goat Cheese Salad with Pomegranate Arils – A more recent salad and a combination of some of my favorite fall/winter fruits. Fresh figs are the best and you’ll be amazed how well they go with goat cheese and this dressing!
Coconut Oatmeal Gluten Free Pancakes – I love these pancakes because they are filling and they’ve got coconut, which I can never seem to get enough of. Annnddd…..you’ll never be able to tell that they’re gluten-free!
Vegan Harvest Grains with Roasted Vegetables – Who says you can’t enjoy roasted vegetables in various ways? Combine them with harvest grains (these are from Trader Joes) for a “salad” type side dish. Skip the cheese and make this vegan!
Mashed Purple Potatoes with Whipped Goat Cheese – Tired of boring yellow potatoes? Try these purple potatoes. Delicious. This recipe pairs potatoes with whipped goat cheese.
Quinoa Kale Salad with Roasted Sweet Potatoes – Colorful. Healthy ingredients. And the most amazing sweet tahini dressing you will make. This is my mom’s favorite salad.
Syrian Fig Jam – A family recipe that’s been passed down to me.
Peanut Butter Oatmeal Smoothie – Last but definitely not least. Breakfast, lunch, dinner or dessert. You pick!
