I’m not exaggerating when I say these take all of 30 minutes to make and bake and require only 4 ingredients. I mean, it really doesn’t get easier. This is one of my mom’s go-to recipe when she’s having parties at her house and I remember sneaking in more than a few of these cheese parsley cups when I lived at home. I was going through an anti-parsley phase at the time but I was willing to overlook those pesky greens. Minor issue in light of how awesome they tasted. Now I can’t get enough of the stuff. Part of my 4 ingredients are 2 cheeses, feta and an Italian mix. You can really sub in any cheese, just make sure it pairs well with parsley.

Bite Sized Thanksgiving Appetizers: Feta-Mozzarella Parsley Cups - so easy and quick to make!

FETA-MOZZARELLA PARSLEY CUPS

Yield: 15 mini cups
Time: 25-30 minutes

INGREDIENTS
1/4 c + 1 T parsley, chopped
1/2 c + 1 T Italian cheeses
3 T feta cheese, crumbled
1 pack (15 shells) mini fillo shells, thawed
 
DIRECTIONS
In a small bowl, mix together parsley and cheeses. Fill each shell with 1-2 tsp of parsley-cheese mix. Bake at 350F for 15 minutes or until cheese melts.
