Bulgur Cilantro Veggie Burgers

Veggie burger day has finally arrived after much anticipation. These bulgur quinoa burgers have bulgur, quinoa, walnuts, and cilantro and are topped with a creamy cumin yogurt.

Seriously, how delicious does that look? Since I’m not a fan of tofu (ok, ok, I have to admit I’ve never tried it…it just scares me too much), I kept ingredients simple. If you happen to have leftovers, they taste just as good the second day. I’ve even had them cold and they’re great!

BULGUR QUINOA VEGGIE BURGERS WITH A CUMIN-YOGURT SAUCE RECIPE AND INGREDIENTS

BURGERS
1 large onion
1-2 T olive oil
1 1/2 c cooked bulgur (1/2 c uncooked)
1 c quinoa, cooked
1/2 c rolled oats
1/2 c walnuts
2 T soy sauce
2 garlic cloves
1/2 c cilantro
1 tsp cumin
dash cayenne
dash paprika
1 egg
Cumin-yogurt sauce (below)
Lettuce
Tomatoes, sliced
Hamburger Buns or Homemade Rolls
Place all ingredients together in a food processor and process into a paste. My food processor is small so I have to do everything in batches. Form veggie burgers into patties. Heat 1-2 T of olive oil in a skillet on the stove. Add patties and cook for a 3 minutes on each side (remember that there is raw egg – you may want to use a thermometer to check internal temperature.
CUMIN-YOGURT SAUCE
1/4 c yogurt
1/4 c sour cream
2 tsp lemon juice
1/2 tsp cumin
salt to taste
Mix together and serve atop the burger.
