I’m going to dub the next few weeks “Peach Week” since all I have been cooking with recently are peaches. I’m not complaining. I was never a huge fan of peaches until I tried a white peach and then I converted in an instant. White peaches are some of life’s best and if you’ve never had one, you are missing out. Donut peaches, especially, are delicious and now that my parents have been giving them to us freely, we have been living in peach heaven.
1 1/4 c flour
In a separate bowl, mix flour, sugar and baking powder together. Add in softened butter and mix with hands. Pour in buttermilk and stir well. Spoon batter into each individual ramekin, dividing out evenly. Place ramekins on a baking sheet (to catch drips) and bake in preheated oven at 400F for 30-35 minutes or until toothpick comes out clean when inserted into the dough portion.
